They do but I'd prefer to manage Minecraft in a container/VM myself.

From experience, you will notice next to no difference with a MC server with a HDD or SSD.
In that case you probably don't have much experience with Minecraft.
As a fairly experienced Minecraft server owner, there is a huge difference.
SSD>HDD - They are worlds apart!

It depends what you are using it for. If its your average bog standard MC server with little to no worldedit and its more of a pure survival server, you will notice little to no difference, if however you are storing loads of stuff in Core Protect, doing extensive map landscaping or similar, you will quite possibly notice some difference, however from experience, there is little to no difference in most day to day things that I have ran for a reasonable amount of players.
My point is, if you are not planning on doing much, you will be better off going for a cheaper option with HDD, if you're planning on re-landscaping the entire map, have huge Sqlite databases and such, yes a SSD will be better.
