Anyone have any good spots that are their go to for purchase of 1U/2U rackmount servers / parts?
I have been utilizing Newegg since early 2000's, mostly because they are close to me so turnaround time for an order is typically fast.

My go-to site for getting quotes is Thinkmate.
Their website is easy to use, and their sales can reply to email requests in 2 hours.
Actual purchasing is through a bidding process, and I don't know how that works.
I like getting server hardware off eBay, Amazon, Dell, NewEgg and CDW, I've also got a couple local vendors I work with for certain parts.
For me it's whoever is cheapest. I even use different suppliers for one server, barebone, cpu, ram etc
Depends on what you are looking for as far as how old/new the products are.
But like @SWN_Michael said eBay, Amazon, NewEgg. But I got my suppliers as well.
You could try using https://labgopher.com/ (a website that indexes eBay) to look for a base server (or buy a barebones one).
Then once you find one, you can modify it by adding RAM, swapping CPUs, etc from eBay/Amazon.
Haven't used it, but have heard somethings about UnixSurplus.

Glad to help! I see their listings on Ebay constantly, and checked out their site. They have some pretty good deals regarding drives & servers. Know a couple people who have purchased from them and seem to like it.
I would also take a peek at Garland Computers on Ebay (https://www.ebay.com/usr/garlandcomputer). I've purchased from them a couple times and haven't really had issues. Pricing is fair and they have some good deals here and there.
https://www.theserverstore.com/ is a good place to buy used servers, they market a lot on eBay. They essentially have every configuration you can imagine, beyond what they market on their site or eBay.
