That looks like and awesome workstation distro.
I'm thinking of offer pre made templates with CentOS 6.4 + LAMP + Virtualmin but since all of that can be done with minimal effort I'm not sure if it is worth doing.

Wouldn't a user that would want such a rolling distro prefer to install from iso themselves to tweak it during the installation? This is especially true for Gentoo.
They would but, that is a very complicated process, so it is easier if you provide one, and the user just updates it.
VPN-ready templates, perhaps ownCloud w/nginx as that can be a swine to setup, newznab maybe?

Scientific Linux, it may be almost the same as CentOS, but it's what I'm used to using. Keep it minimal, and I'll add what I want.

A minimal version of Ubuntu 13.04 would be awesome, considering that there are no openvz packages available atm.. If you do create it, do let me know!
