VPS will be cheaper if you are not planning to utilize CPU 24/7. But seeing 16 core, I can safely assume that you mean serious business .
Checked it out, seems like way too much storage and RAM with the biggest plans, we mainly need CPU power

@chwba - might be good to give some idea about intended use.
(as in, some dedi providers just don't want to have anything to do with crypto mining - though most are probably okay with it as long as you pay their power bills)
@Ikoula is another decent option for affordable dedis in France (the control panel is a minor pain point but all things considered, personally enjoyed a generally positive experience when I tried them a couple years ago. Might note that they will want a copy of your ID when you sign up.)

Do you need that many cores, or actual power? For that many cores, WholeSaleInternet, Heymman and OVH are your best bet. If you need power, Hetzner's AX41-NVMe is the current leader, by far.
