80 would be optimal, but If I was you I would try to go for 90.
You got 20c/40t , if you do 90 then it would leave you with 1 vCore for every 2.25 customers.
Also, why are you going with 512mb and 1gb, couldn't you go for 2gb and still have some memory left over?
I recommend installing NVMe SSD's 2x1TB.

I think it is not good idea to use RAID-5 for SSD
80 VPS's on mWOPR 2016? You could hardly make much profit...I'd recommend 90-100.
my main concern is not the processor, but the 5xssds in raid 5, with 80vps.
Also, don't they charge 2 euros for each additional ip plus 2.99 activation fee?
So doing 512mb would be pointless as the IP would cost more than the plan if he intends on selling them in 512mb and 1gb plans.
RAID5 has a write penalty so keep that in mind.

For software RAID, keep it to RAID1/10. If the MWOPR has a dedicated raid card, you will likely find performance of RAID5/6 to be higher than RAID1/10. RAID6 would give you 1.5T usable (roughly), whereas RAID1 will give you 1T usable with a hotspare.
