If you can make more use of the RAM for caching it won't matter too much what the disks are.

Hard to judge about that with just one print screen.
With some service optimization you can squeeze a lot out of a smaller VPS! Especially since stock configs are far from optimal.
A physical server is most of the time just overkill for one website. Great thing about a VPS is that you usually get better hardware specs in form of CPU and much better I/O speeds.
