It used to be debian 7. I am not sure debian 8 will become my new favourite OS though, due to systemd.
Centos. I find it easy as I'm a total noob. The learning curve is fairly easy plus there's a lot of documentation available.

Out of the box debian uses less ram, best to give it a try yourself.
