FreePBX or PBX in a Flash are both asterisk PBX distros with web based GUI's on top of them. If you were to install from one of their .iso's you'll get all the bells and whistles out of the box.
i have a trixbox openvz template. if you have an openvz vps, your provider can install it in a minute, just like you install centos etc via solusvm! I am selling it for $10.

I have a PBX In a Flash setup for my home office. I have to say the install was pretty painless and really easy. The hardest part was finding a good provider that could call out to Hawaii. I ended up going with IPComms using their 2-way unlimited plan. Though there's also SIP.us, Sipstation if you don't need AK or HI calling.
I will mention that my PBX In a Flash setup is the Incredible PBX version running on my Raspberry Pi Model B.

@sandoz Are you using an OpenVZ VPS? You may need to try it under KVM/XEN.
A quick google search turned out a few more hints:

OK I did a bit more research. Here are my suggestions.
Edit: A working solution has been found! See instructions below.
To install PBX in a Flash on an OpenVZ VPS, follow these steps:
1 - Follow instructions in my tutorial until before the step "Mount the ISO".
2 - Now, instead of mounting that ISO via "loop", we extract it directly. Here's how:
(1) - Download and extract p7zip from SourceForge:
(2) - Extract the PIAF ISO using the following command:
3 - Proceed with other instructions in my tutorial starting with the section "Add the PIAF repository from ISO to yum configuration".
Note: While PBX in a Flash may work under OpenVZ, a few features are unavailable.

Just copy the image to an sd card and boot the rpi and follow the on screen instructions. After you have it setup you can use the ssh option to login and manage the pi without the need of a keyboard or mouse.
I had PBX In a Flash running on a desktop but switch to the Pi due to the amount of phones and power consumption. Seriously it's not hard to setup it's just whether you take the effort TO set it up, remember perseverance!
