kvm and xen are virtualization technologies, whereas openvpn is,...well, yeah. ;-)
Great question, I'm interested in learning a lot from this.
I am openvz user.. so, if I can get more performance and better benefits on kvm or xen, I can try them.. I just worry about how they operate.. how to run command, their abilities.. I dont want to buy a vps and request refund just because I dont know how to operate them

openvz is just software based.
you can go on overselling openvz but not others, and you can install openvz not only on the dedi, but also on a kvm/xen box
you can install any os of choice on xen/kvm

definition 1: OpenVZ allows some providers like #winning to sell 200-250GB RAM on a 32GB E3 node. Overselling is still possible to some degree on Xen and KVM but not to the same extent that it is on OpenVZ
definition 2: Xen and KVM are virtualization methods. OpenVZ is containerization not true virtualization.

I also suggest starting reading at Wikipedia's Virtualization and follow links.
In short: if you are OK with Linux distributions and do not need features like SELinux, ipset netfilter module etc., you ca go with OpenVZ. Note that although it's faster than other mentioned at a cost of less protection of one contained VM from others. Also, node owner can access your data in much easier way with OpenVZ.
if you need your own/custom OS, KVM or Xen HVM are your choices. They are somewhat slower, but give much more control over what you can install/how do you utilize resources.
Note there are more than these three (four, since there are Xen PV and Xen HVM) techniques, VMWare being another popular one.
If you install centos 6 in xen or vz or kvm, commands to use the operating system are the same. Tun for vz depends on provider and cant change kernel, with xen and kvm, you have ability to use custom kernel and tun at your will.
