You shouldn't forget to only go with trusted providers as otherwise the uptime may not be this great which isn't good for a mail server without backup MX.

Nope, I do have plans for a backup MX though. I just don't trust evoBurst enough.
I've got a VPS with BudgetVZ location, got it since 15 days, uptime is 15 days, but really wouldn't consider choosing this one as primary mail server. If your specs were lower I'd say RamNodes 15$/y plan. VPSDime got a great uptime as well, or BWH.

How about linode, digital ocean , vultr , ramnode , secure Dragon or buy vm?
You would probably want to discard all those cheap OpenVZ offers for a mail server.
There are plenty of offers meeting your requirements, do some market research.
A personal recommendation from me would be:

256mb may be too low for email server with antivirus / antispam features.
Aim for 768 / 1024 mb minimum.
