New servers on 7, you don’t want to have to re-do it in 2 years.
CentOS 6 is stable, but CentOS 7 is stable and more future-proof, especially if it's a single-server operation.
We run CentOS 7 and have no issues.

Just go with the latest stable at the moment and assemble something functional.
Never use CentOS 6 for cPanel. You will be get annoyed by cPanel Notice in WHM
Seems like Centos 7 in long run now.
