The only thing that I use mine for is a SubSonic server that I run from home. I wish that I could do something cooler with it, but I haven't been able to do that yet.
I use it as local webserver.
And let it work as fileserver becuase i dont have other ideas.
I use it as a Pi-Hole ad blocking DNS server, and a small speaker system that I pipe songs to from my phone or computer.
I've given one away to a member on here and have 4 left haha

I've got one that is acting as a gateway for tor, the other powers a work tasking system, with items such as analystics, touch-screen dashboard for easily adding reminders, placing phone calls, sms, etc. all built upon NodeJS

I have one with GoldenOrb OpenWRT router. I use it with 3G/4G modem + Wifi at my cottage.
Home Assistant is awesome. Also a nice quiet deskside server for people who don't want virtualbox slowing down their gaming system.

It also work as a Tor hidden service, and a small Nodejs website

Build a cluster and then sent it to a data center that don't mind. haha. On a serious note, i would use it to build a cheaper PC for my family member to use, e.g wireless mouse and keyboard to hook up the raspi to their 60 inch TV.
I just grabbed a RP to setup Pi-Hole at home. It's a pretty neat idea.

RasPlex. Works great, cheap little device to stream media from my Plex server.

I use it as a VNC client at my workplace.
I have a few that I use for backups and a usenet indexer :-)
We have one in the datacenter that runs an API and can connect to ipmi. This way, it's possible to reboot the servers remotely.
I do this and servers without IPMI are hooked up to a home made solid state relay PDU for reboots. Not clean but it's not failed in 6 months
To be fair the use for my RPI2 (a wireless extender) is kind of a waste
