Multiple things that could be happening:
Is there any log.....of the emails sent...
I just wanted to know the amount and reciepient of the email
If you don't need to send mail from your VPS then simply block outbound smtp.
I may need it for future but currently i will block it ...any solution....

Run the IP against blacklists -- some will show the headers of the mail that contained spam (if things made it this far).

You have to secure all forms on your websites put some captcha.
If i were you i would also increase smtp security like enabling the setting user must be authenticated with a mail account before sending.
You can also change smpt port.
