To be honest: I started giving a shit about all those page load time tests a long time ago. They are so much depending on the general network situation at the given moment and do not help at all. If the site that you are running seems snappy from your side and nobody's complaining - have a drink and feel easy! ;-)
I guess you should add the graphs showing your traffic, your VPS's resources usage and Nginx logs during the same period.
+Your site loads in less than 800ms, it's still good.
yes, it seems quite normal to me. You can expect the time to go up and down for so many different factors depending on your system, on the host, on the sharing of resources, on the infrastructure status...
