CentOS is the free community supported version of Red Hat.
I wouldn't bother with books, they're largely outdated.
With CentOS though; that might make a bit of an exception, considering it too is also largely outdated.
I belive the best way to learn is to have a small VPS or even the installation under VMware and try to set web/file/samba/dns-server, etc. The internet is full of manuals and howtos.
I double that. You better start hands on. There is a plenty on-line resources that can help you.
What do you expect from the book? Would you like to use it as a reference or are you looking for training?
Books are outdated, though the basics and concepts are almost there anyway.. It is better to look for books on Redhat. I have seen books on CentOS on and off, but it doesn't interest me

"Advanced Linux Programming" is an oldie and available as an ebook... it covers a lot of basic concepts to give you a solid starting foundation.
I've found there are a lot of .edu sites with great and lengthy tutorials with a nice minimal design and 'wall of text' to get stuck into.
In the end, the man pages get you everything else.
I recommend the Redhat 6 Deployment Guide https://www.redhat.com/resourcelibrary/datasheets/red-hat-enterprise-linux-6-deployment-guide and the Debian Administrator's handbook http://debian-handbook.info/get/.
There is also a lot of good information in your /usr/share/doc directory.
This book here is all about solving and setting up different problems and then use google to find the package name in centos or debian or what ever.
