honestly - i would go with http://www.hostgator.com/shared Baby Plan... they all have cpanel so would have squirrel, roundcube and horde installed...
postfix + dovecot + postfixadmin = Profit.
I'm using Virtualmin, removed all of the Web and SQL stuff. Just email.
MXroute uses VestaCP.
Using qmail + vpopmail + spamassassin + clamav + qmailadmin. Probably not the easiest to setup though...

It's all automagic. Run the install file on a clean server, wait four - five minutes, and then it's good to go.
You still need to do all the DNS stuff separately, of course. Chances are your registrar has some helpful guides for it. Otherwise, there's a plethora online; probably even on the VestaCP forums.
I use Virtualmin GPL. So much more than email but it does that well too. You can turn off everything except email if you want. 100% free as in free beer. Doesn't try re-invent linux like some other GUI's. So you can do many things either in the GUI or directly on config files from command line or both.
Highly underrated imho. Probably because their theme is kind of ugly. That's just the window dressing though.
Agreed, I use virtualmin on all of my boxes. Find it's easy to remove what you dont want and run what you do.
