Voiding ads from apps on your phone
Atleast this seems to work for Android:
As far as I know there is not yet a way to configure specific DNS Servers on your androidphone without VPN yet. However once you connect to any OpenVPN client via "OpenVPN for Android" app, you can actually configure AdGuards DNS servers and void all the nasty ads in your apps as well as in your browser of choice (but this is mostly for apps as there are already browser apps that have built-in adblock like Firefox private etc). ^^

Root access + Adaway (https://f-droid.org/packages/org.adaway/) is probably the better choice.
you will need your own dns ad blocker eg: https://pi-hole.net/
then install
https://play.google.com/store/apps/details?id=com.aykutcevik.dnschanger
when you root do you get the all android updates (os, apps etc ...) ?
Yup, if you are using something like LineageOS. Apps yes on stock roms but OS depends on OEM. Sometimes it breaks, sometimes it does not.
Why use an adblock Software though if I can simply use DNS and use OpenVPN in public wifi/mobile network anyway?
PiHole is not blocking youtube/facebook ads on mobile. Does anyone know how to block them without root?
Shadowsocks + PFSense
Shadowsocks let's you filter apps selectively without the need of root.
PFSense in front of that just let's you block anything you want.
Or Softether/OpenVPN and OpenVPN for Android. Still no need for root. You should block ads on vpn server level though.

Don't use Facebook, but for watching youtube videos, I prefer Youtube Vanced over the official app. Check it out - https://forum.xda-developers.com/android/apps-games/app-youtube-vanced-edition-t3758757
this looks good, I will give it a try. Thanks
You can configure your device to use another DNS by going to your WiFi -> hold down on your WiFi network -> Modify network -> Advanced options -> Change IP settings to static -> assign your android device with a unused IP then put your DNS in
This wouldn't work with mobile internet though, or would it? How would you know which IP Adresses your mobile carrier/ISP assigns?
It won't work for mobile data but there's no point (atleast in the UK with three) as the DNS is on there own network before it reaches the external internet unless if your only changing it for privacy.
Consider NoRoot Firewall as well: https://play.google.com/store/apps/details?id=app.greyshirts.firewall&hl=en
Blocks everything by default. Turns out that most apps barely need any network access, and it's usually pretty easy to identify which hosts are the legitimate ones, and which are the advertising/tracking systems.
