Impressive. I wonder how you can have 1200 users without throwing 500 errors.
First, you are using apache. I think anything about 1GB (512MB in Xen/KVM maybe) can do it fine if you move to nginx, cherokee or whatever but apache.
Also, almost any plan around that 1GB memory will provide you with 1TB of traffic.
If you want something in Europe, maybe you want to take a look at edis.at Is what I can recommend :P There are more, but you didn't mentioned how much $$$ you want to spend.
