Obligatory warning that there's no such thing as a 'perfect stack' or even universal tools in programming, in particular not where Node.js is involved... so any course that tries to teach you a specific collection of tools/technologies (instead of the underlying mechanisms and principles) is likely of very poor quality.
EDIT: To be clear, a lot of the online programming courses are of very poor quality; probably the majority, even. They're mostly cash grabs.
